National 4/5 – Hospitality Practical Cookery
The Scottish catering and hospitality industries are large, invigorating and thriving, employing a significant proportion of the nation’s workforce. Throughout Scotland, employers want well-educated and skilled workers capable of further professional development, and this qualification in Hospitality aims to answer this.
This Hospitality practical cookery course is being offered at National 3, 4 and 5 levels. If you choose to study this subject in fourth year we hope to give you the opportunity to complete all units of work and the final added value unit or course assessment depending on your level of study.
There are 4 units within this course
Unit 1: Cookery Skills, Processes and Techniques. In this unit you will extend your basic cookery skills and food preparation techniques, by producing simple dishes. You will also learn the importance of safety and hygiene and the ability to follow safe and hygienic practices at all times.
Unit 2: Understanding and Using Ingredients. This unit aims to develop your basic knowledge and understanding of ingredients and how these can be used to produce dishes to a high standard. It also addresses the importance of sustainability, responsible sourcing of ingredients and the impact of their choice on health and wellbeing.
Unit 3: Organisational Skills for Cooking. This unit aims to develop your planning, organisational and time management skills.
Unit 4: Added Value Unit- Producing a Meal. ( National 4 ) In this unit you will combine all your knowledge and skills
from the other three units to carry out a practical activity which will involve producing a simple meal to a given specification. You will plan, prepare and cook a two-course meal for a set number of people within a given timescale and present it appropriately.
Unit 4: Course Assessment. ( National 5 ) In this unit you will combine all your knowledge and skills from the other three units to carry out a practical activity which will involve producing a simple meal to a given specification. You will plan, prepare and cook a three-course meal for a set number of people within a given timescale and present it appropriately.
